Banana Lassi
Ingredients
2 over-ripe bananas, broken into chunks
1 1/4 cups thick plain yogurt
1/3 cup milk, or more to taste
2 ice cubes
2 tablespoons white sugar
Directions
Blend bananas, yogurt, milk, ice cubes, and sugar together in a blender until smooth. The servings are small in comparison to restaurants, but it’s probably a good idea to consume smaller amounts of good active bacteria in yogurt. Substitute honey for sugar, if desired.
Use good strong-flavoured yogurt: it makes all the difference. Milk is just to get things moving, so you can adjust to preferred taste/texture.
Mango Lassi
Ingredients
2 cups plain whole milk
yogurt
1 cup milk
3 mangoes – peeled, seeded, and chopped
4 teaspoons white sugar
1/8 teaspoon ground cardamom
Directions
Place the yogurt, milk, mangoes, white sugar, and cardamom into the jar of a blender and blend until smooth, about 2 minutes. Chill in the refrigerator for 1 hour or until cold, and serve sprinkled with a little ground cardamom.
The Traditional Lassi
Ingredients
Thick yogurt – 2 cups
Chilled milk – ¼ cup
Sugar – 3 tablespoon
Cardamom powder – a pinch
Pistachios – 2 tablespoon (chopped)
Glazed cherries (chopped) for garnish (optional)
Instructions
Take the yogurt in a large mixing bowl. Add chilled milk and sugar. Using a wired whisk churn it thoroughly for at least 5 minutes till the sugar dissolves. Add the cardamom powder and add the half of the chopped pistachios. Churn it again to create frothy layer. You will see that foam has formed on the top of lassi. Now pour drink in glasses .
Garnish with left pistachios and chopped cherries. Serve it chilled. The amount of water/milk can be adjusted based on the consistency desired. Curd and milk or water should be absolutely chilled. You can use a hand blender in place of wired whisk and put all other ingredients. Blend everything and serve lassi chilled.
